Crepes are magnificent, they are lighter then pancakes, and although harder to cook may be served with a number of delicious fillings. In ancient Kiev Rus crepes were served with red and black caviar, with salmon and other delicious filling. The number of sweet fillings that may be invented is literally unlimited: with berries and fruit, with jams, glaze and cream cheese, you name it. SO this recipe of crepes is universal and you can create your own stuffing.
In ancient Kiev Rus crepes were served for every celebration and feast and simple crepes with honey or with sour cream were a traditional Sunday meal.
For crepe preparation you will need a good frying pan and of course a spatula.
Ingredients: (For 1 stack of thin crepes(12-15 thin crepes)
1-2 eggs;
0.5 cup of water and 0.5 cup of milk (1 cup of water);
2-3 drops of vanilla extract; (if the filling is sweet, if not just add 1 drop)
2-3 tablespoons of sugar; (If the crepe filling is sweet if not add 1 tablespoon)
0.5 cup of flour;
Salt on the tip of the knife;
2-3 tablespoons of sunflower/corn oil; (plus corn oil for the frying)
Mix properly all the ingredients. You can start with mixing egg(s) and water/milk, and then gradually add sugar, flour and salt/ sugar. The dough shouldn’t be thick or thin. It should resemble the consistency of crème-soup. After you have mixed everything add 2-3 tablespoons of corn/sunflower oil.
Preheat the frying pan 2-3 min at the highest heat, and then reduce to medium. Pour a little bit of oil on the frying pan, then take the soup ladle and pour one soup ladle full of dough on the frying pan.
Fry until you will see golden edges around the dough, turn the pancake over with a spatula and fry another side.
When the whole stack is ready put your filling or topping inside and roll the crepe. 
For this dish I use chicken , mushroom and cheese toppings.
For 10-15 crepes you will need:
1 chicken breast boiled and chopped
1 cup of shredded cheese
2 cups of mushrooms chopped.
Mix all the ingredients and put into the hot crepes and roll the crepes in.
Ready. Decorate with sour cream as shown.
If the crepes are sweet you can serve the with ice-cream or clotted cream.
