- Roll with poppy seeds and strawberries
This roll will become your Sunday tradition when you try it. It’s so moist and sweet, flavorful , yet simple to cook.
I read that preparation of this roll is very widespread in Eastern Europe . I cannot confirm that , but I tasted it maybe couple times at my Grandma’s when I was a kid.

I put the strawberries inside because I though that it’s calling for some lightness of berries or fruit. I never tasted the roll with poppy seeds and strawberries before, but it was really good, that’s why next time I will not change a thing. Or maybe will add peaches instead of strawberries. It’s always good to experiment.
Cooking time : 20 minutes
Preparation: 45 minutes
Serves : 8 people
The dough is very simple in preparation:
1 cup of warm water or milk
1 packet of dry yeast
3 eggs
3-3.5 cups of flour (until the dough is firm enough)
1 teaspoons of vanilla sugar (from Russian store) or vanilla extract
4-5 tablespoons of sugar

Preparation:
Mix the milk with yeast. Let it stand for 10 minutes until dissolved. Add the eggs and 1 cup of flour mix very well and let it stand for 30 minutes. (now you do understand why I say Sunday tradition, because the dough may take some time to prepare and with the breaks in preparation of the roll, you can manage to do 2-3 things besides this deliciousness)
When the dough mixture raised add 4-5 tablespoons fo sugar, then add another 2-2.5 cups of flour (sifted flour will raise better). Knead the dough a little bit than roll it out and put the stuffing inside.
Fold the sides of your dough that will be the ends of the roll and only then roll the dough in.
It’s better when you fold the ends of the roll because the stuffing may start to run on your baking sheet and your roll wil start burning together with the runaway stuffing. and this will spoil the taste of the roll.
***Tip from Helen*** If you want to cook more dough with 1 yeast packet you definitely can, the dough will raise just fine. I double the dose of milk/ water and flour when I mix the yeast with the milk (2 cups), let it stand and then add 1 cup of flour (not eggs). After that I divide the dough – one half goes for this roll another half goes for 2 large 8 inch pizzas. Finish the dough preparation for pizzas by adding flour and olive oil see the recipe here. For the roll add the eggs and flour and you are good***
When you rolled the dough in, grease the baking sheet and put the roll on it and let it stand for another 10 minutes (the longer the better).
Preheat the oven at 350F and bake the roll for 20 minutes or until ready.
If you want you roll to look glossy, then brush it up with the beaten egg 10-15 minutes into baking.
Stuffing:
1/2 lb cooked and mashed poppy seeds with the sugar. (You can by those from Russian store during Christian Orthodox holidays: Christmas, Easter etc or you can cook those yourself by boiling, draining and mashing the poppy seeds.)
9-10 strawberries sliced
1-2 tablespoons of vanilla sugar/ or extract
There’s no rocket science to the stuffing I just wanted to note that the raw poppy seeds aren’t good for the stuffing. They will be just tasteless so if you can’t find the poppy seeds you can use nuts (especially walnuts or almonds with any berries or fruit)
