- Slavic Vinaigrette Salad.
- Simple country salad
This is a traditional salad for Ukrainian family gathering or for Sunday dinner.
It’s good because it is light, contains ingredients that are good for the health and may be seasoned with sunflower oil or with mayo (which is less common, but very delicious too.)
For the recipe you will need:
2 boiled potatoes cut in cubes
1 boiled carrot finely chopped
½ onion finely chopped
4-6 pickled cucumbers
1 big beet
½ cup of green beans
1 teaspoon salt
1 teaspoon pepper
3-4 tablespoons of sunflower / olive oil OR 2 tablespoons of mayo
Boil beets separately from potatoes and carrot. Beets should be boiled until soft inside- about 1.5 hour. It takes about 30-40 minutes for potatoes and carrots to be cooked.
When the veggies are ready, let them cool and then peel and cut everything in cubes.
Finely chop the onion and cut the pickles in cubes. Mix all the ingredients in large bowl, add ½ cup of canned green beans , season with 1 teaspoon of salt and 1 teaspoon of fresh ground pepper. Add sunflower oil or mayo, depends on what you like more.
